The incurved paring knife is a used for peeling and coring fruit and vegetables and when delicate hand work is needed for decorative garnishes. In French it is known as a "Bec d'Oiseau" which translates as "bird's beak" due to the curve of the knife.
At 9cm in length it is slightly larger than our 3 in paring knife (8cm). It is available with a stainless steel blade only.
